Well, because the car overheats & is throwing the coolant light code, I'm going to assume it's not an electrical issue with the gauge.
The only other easy check I can think of is air in the cooling system. When I bleed them, I let the car run a good 10 minutes to make sure there are no bubbles in the system.

Ill check into that, but first im gonna do the data logging to see if the car is really getting hot or not. those sensors have a spring in them, and when the does over heat the springs stretch beyond what they should and because of that its possiable for the inaccurate readings..... UPDATE:
Hooked up the logger to christine's car and after about 10 min of driving the coolant guage was reading about 3/4 to the top. Pocket logger was reading 217 degrees at its highest. Shut off the A/C and within a few mins the temp sat around 204 degrees and the guage went back to normal.....So would 13 degrees difference make that guage move that much? If you count the little lines on the guage normal seems to be about 6 lines from the bottom and the highest it got was 10 lines on the guage.
I think the guage itself in the car is bad?? WTF time to pull the dash?
Anyways her car is not holding alot of oil pressure according to the guage in the car, that guage should be good...it time for some motor work to get done i think.....I still didnt do a compression test yet
I also did replace the coolant sending unit and there was no more codes on the logger, didnt even throw a 02 sensor code. Funny thing with that is the logger was reading 5.00v on 02 sensor readings lol......Opinions?!?

The O2 sensor has a short somewhere.
The lines on the stock temp gauge don't correspond to any number. I've watched the temp climb as high as 205 and it'll still point in the same spot as 190. ...but then at around 210, the stock gauge will climb a little and by 220 it's almost at the top. I'm convinced it's designed this way to keep the average driver from fearing the worst when the truth is, the temp does fluctate a lot.
The stock oil pressure gauge isn't considered "accurate" by many on 3si for the same reasons I listed above for the coolant gauge, however, it is acurate enough to tell you when your motor is on its way out.
I made a thread about the stock oil gauge and the wiring leading to it. Try my suggestions in that thread before assuming the worst.

or screw an actual gauge in it, and see what the pressure is at idle...
